Cheesy Vegan Broccoli Potato Bites!
Sorry if these aren’t super exact measurements, I eyeballed the ingredients while shooting this video 😉
→ pulse mixture in food processor in 2 batches until it reaches the stage of chunky mashed potatoes – Fry until crispy and golden brown on the outside.
1 small head of broccoli, steamed
2 medium sized potatoes, boiled for ~20 mins until tender, then peeled
4 tbsp sunflower seeds
2 tbsp lemon juice
salt, pepper to taste
1 tsp smoked paprika powder
2 small cloves garlic
1 tsp mustard
4 tbsp small cut oats
6 tbsp tapioca or cornstarch
3-4 tsp oil for frying
