Dinuguan is a Filipino pork stew dish, however this version I used native chicken. It is sauteed in ginger, garlic, onion and red chili and simmered in chicken’s blood and lemongrass. Serve it while it’s steaming hot with freshly steamed white rice.

2 thumb-sized ginger
7 cloves garlic
2 medium-sized onion
2 pcs red chili
1 whole native chicken
3 tbsp of fish sauce
1/2 tsp of ground pepper
1 & 1/2 cup of water
2 stalks of lemongrass
eggs from native chicken
liver from native chicken
1/4 cup chicken blood (with vinegar)
3 green chilis
